Feature recipe - Morrocan Rice Salad

Moroccan Rice Salad

This salad is a good one to have in the fridge and consume over a few days. If you like, you could replace some of the brown rice with wild rice, which adds texture and interest. It will need to be cooked separately though, as it takes about 10 minutes longer to cook.

1 ½ cups brown rice
¾ cup toasted hazelnuts, chopped
1 Tbsp cumin seeds
4 spring onions
2 cups fresh coriander
¾ cup raisins
Grated zest and juice of 1 orange
1 Tbsp lemon juice
¼ cup Lupi Extra Virgin Olive Oil Special Selection
¼ tsp Kaitaia Fire, or Tabasco Sauce

Boil the rice in a large saucepan of salted water for about 35 minutes or until tender, drain and cool.

Put the cumin seeds in a dry frying pan over moderate heat until you begin to smell them, then remove to a mortar and pestle or spice mill and grind to a coarse powder.

Slice the spring onions finely, using only the green part, and chop the coriander leaves and stems.

Combine all the ingredients in a large bowl and season to taste. May be kept, chilled, for up to three days, but best served at room temperature.
